Jean-Pierre et Chantal Santini ont montré la voie et ont défini les fondamentaux du Domaine du Paternel. Ils gardent un œil sur la conduite du domaine avec, toujours, conseils avisés et remarques pertinentes. Aujourd’hui, les deux frères, Jean-Christophe, pour la partie commer- ciale, et Olivier, pour la partie technique, forment un duo complémentaire de vignerons. Les livrai- sons, le suivi des clients, c’est l’affaire de Jean-Christophe et le vignoble et le chai, celle d’Olivier. «Avec toute notre équipe, on aime le travail bien fait et dans la longueur. Le plus important, c’est la régularité, la permanence du style.» Le choix du bio, la netteté du chai, l’organisation au cordeau et l’impeccable chaîne du froidmaintenue dès les vendanges font partie de l’ADN de la maison. «Nous ne sommes pas des fous de technologie, mais nous utilisons tous les outils actuels pour faire les vins qui nous plaisent.» Cela se sent dans l’éclatant Blanc de Blancs, cuvée phare du domaine, à domi- nante de clairette, pure et précise, mais la gamme explore tous les visages de Cassis: rouges, rosés et un blanc vinifié en fût, charnu et puissant, baptisé «Esprit de Famille» . Le Domaine du Paternel tient parfaitement les deux bouts de la chaîne : un pied dans le passé, avec une fidélité sans faille à la famille et à la tradition, l’autre solidement ancré dans la modernité. Un compromis qui se lit sur l’étiquette héritée du grand-oncle, subtilement retouchée pour la mettre au goût du jour. Jean-Pierre and Chantal Santini have paved the way, establishing the fundamental principles of Domaine du Paternel. They keep an eye on the running of the estate and provide advice and guidance. With Jean-Christophe running the business, and Olivier taking care of the technical aspects of winemaking, the brothers form a complementary pair. Deliveries and after-sales service is the domain of Jean-Christophe, whereas Olivier takes care of the vineyards and the cellar. “All the team likes to see a job well done and we share a long-term view of things, the most important thing being the ongoing consistency of style.” The decision to go organic, scrupulous cleanliness in the winery, the flawless straight lines of the vineyard and the impeccable cold chain that begins at the point of harvest are all part of this estate’s DNA. “We are not crazy about technology for its own sake, but we use all of today’s resources tomakewine that we like and canbe proud of.” Thatmuch is clear fromthe brilliant Blanc de Blanc, the flagship estatewine dominated by Clairette, with its purity and precision, but the range also explores every facet of Cassis: reds, rosés and a meaty, powerful cask- vinifiedwhite,named‘EspritdeFamille’.DomaineduPaternelistheepitomeofhowitispossibletokeep one foot firmly planted in the past through solid loyalty to the family and to tradition, and the other in the modern world with all its advantages.
