PRÉFACE

“Cassis is the most beautiful place in the world! Cassis is a ‘supernatural paradise’ ! It is unique and authentic; a small fishing port sheltering between Europe’s highest sea cliff and the rugged terrain of the Massif des Calanques. It is the gem that lies at the heart of the Calanques National Park.

Its vines exalt Cassis, and their wine exalts our heritage; it is one facet of the rich character that is Cassis. 220 hectares of vines and 12 estates, One of the oldest AOCs in France, dating from 1936.

The people of Cassis and their Mayor are immensely proud of this heritage. We are proud of our environment, which we have conserved and protected so well over the centuries. We are proud of our wine- growers, whose predecessors were the very first to cultivate the land of Cassis! We are proud that they have perpetuated an ancient skill that has been passed on since antiquity in this historic vineyard. We are proud of how they have learned to adapt their grape varieties and evolve their vine cultivation techniques to the point where today, they produce wine whose character faithfully reflects the place it comes from. We are proud of our divine wine, in which the strength and richness of our Mediterranean soil is combined with the soft warmth of the sun. The wine-growers of Cassis are deeply united in their commitment to defending their land. And their town is deeply united with its wine-growers. We will continue to develop and extend the cultivation of vines and wine here in Cassis. Because here, the grapevine is a philosophy in its own right. Because our wine is not simply a product to be consumed, it is a concentration of history, culture, tradition and passion. It is a lifestyle. It is our lifestyle.”
